Apple crisp season is here, yum!
We love a good apple crisp but the added sugars and refined flours are not what our bodies need. So we adapted a recipe from www.thechunkychef.com to be gluten free and refined sugar free. Best of all, it’s still just as delicious.
INGREDIENTS:
8 organic apples, peeled and chopped.
2 tablespoons of maple syrup
2 tablespoons ground cinnamon, divided
2 teaspoons lemon juice
3/4 cup coconut sugar
3/4 cup old fashioned oats
3/4 cup almond flour
1/2 cup organic butter, cold and cut into small cubes
1/2 teaspoon of salt
INSTRUCTIONS
Preheat oven to 350 degrees. Set aside an 8 x 8 baking dish.
In a mixing bowl, mix together the chopped apples, maple syrup, 1 teaspoon cinnamon, and lemon juice. Transfer to the baking dish.
In a separate bowl, combine the coconut sugar, oats, almond flour, butter, salt and remaining cinnamon. Use two forks (or clean hands) to cut the butter into the oat mixture. You should end up with pea sized crumbs of butter coated in the oat mixture.
Spread oat topping over the apples in the baking dish.
Bake for 45-55 minutes.
Serve warm and enjoy!
