Natural Peanut Butter Cups
There’s been a lot of chatter around the office about Dr. Jennifer’s recipes and how great of a cook she is - and it’s true! With that being said, I feel left out and feel a need to try and contribute.
“Does Dr. Jason even know how to cook?” Haha! Ok so yes I can cook (at least I like to think I can), but I'm a very simple person in most areas of my life. Basic stir-fry and curry dishes are my forte, the spicier the better. If you're looking for a fancy recipe or something that requires a high degree of technical skill and/or patience then you'd need to look elsewhere!
With that being said, my wife tells me I've mastered the art of healthy homemade chocolate peanut butter cups. They are the definition of simple, and require nothing more than 5 ingredients and a freezer.
Natural Sugar-free Peanut Butter Cups
Here's what you'll need:
-mini muffin baking tray with liners
-1/2 cup melted coconut oil
-1/2 cup unsweetened cocoa powder
-5 tablespoons of raw honey or maple syrup
-1/2 teaspoon of vanilla extract
-some natural peanut butter (no one measures peanut butter, just spoon it in there).
Whisk together everything but the peanut butter. Spoon it into the muffin tray filling up each liner about 1/3 of the way.
Then add some peanut butter to each one. If you're like me and can eat peanut butter from a spoon, then just add a lot, the more the better. Don't overflow the liner though.
Finally, spoon some more of the chocolate coconut oil mixture over the peanut butter so the liner is nearly full.
If you want to add a creative flare, sprinkle some sea salt or dried coconut or coffee grinds or dried berries etc. to the top.
Toss the baking tray in the freezer for about 30 minutes and then enjoy. You should also store them in the freezer or fridge.
That's it. Easy peasy lemon squeezy. Doesn't get any simpler than that!
