Recipe- Key Lime Chia Seed Pudding

Pudding

1 cup unsweetened vanilla almond milk

lime zest from one lime

1 tablespoon maple syrup

4 tablespoons chia seeds
Coconut cream
-
1 can full fat coconut milk
-
lime juice and lime zest from one lime
-
1 tablespoon maple syrup
Topping
-
shredded unsweetened coconut (optional)
METHOD

Whisk together all ingredients for the pudding in a bowl. Whisk by hand for a 2-3 minutes to prevent the chia seeds from clumping. Set the bowl in the fridge for 30 minutes (up to overnight) to allow the pudding to thicken.

Before you are ready to serve, make the coconut cream. Mix together all coconut cream ingredients in a bowl. Use a stand mixer or a hand mixer to whip the ingredients until they resemble whipped cream (5-6 minutes).

In a small bowl or glass jar, layer the chia seed pudding underneath, the coconut cream on top and sprinkle with unsweetened coconut.
